Stuffed Peppers with Ground Turkey and Vegetables

  • 4 Bell peppers any color
  • 1 lb of Ground turkey
  • 2 T Olive oil
  • 1 onion Chopped
  • 2 small zucchini chopped
  • 1 bell pepper of a different color chopped
  • 1 can of diced tomatoes liquid reserved
  • 1 can Tomato paste
  • 3 tsp Italian seasoning
  • 1 T Garlic powder
  • Salt and pepper to taste


  • Preheat oven to 350 degrees
  • Cut tops off peppers and place standing in a baking dish
  • In a skillet over medium heat, heat oil and add onions, zucchini, bell pepper, and ground turkey until turkey is browned.
  • Mix in tomatoes, tomato paste, Italian seasoning, garlic powder, salt and pepper
  • Scoop mixture into peppers until it is just over the top of the pepper.
  • combine remaining tomato paste with juice from the canned tomatoes and add water until thin enough to pour in pan around peppers. Pour into pan.
  • Place in oven and cook for 20 mins.
