The Best Stuffed Bell Peppers With Ground Turkey And Vegetables

One of my favorite recipes is stuffed bell peppers with ground turkey and vegetables! It has always been a dish that leaves me full but not heavy feeling.  Don’t you love it when a meal leaves you feeling light and satisfied?

We searched high and low for a vegetable and turkey stuffed peppers recipe.  I tried a few but never LOVED what I was eating.

Then I found a recipe similar to this one and decided to switch up based on what I had in the fridge, and it turned out great!  I had never made a stuffed pepper like this before, but I have always wanted a healthier stuffed pepper recipe.

This is my husband’s favorite meat stuffed peppers recipe yet!  I think it is a huge win because it has zucchini in it, and that is not on his list of favorite veggies.

What do I serve with ground turkey stuffed peppers?

While some stuffed pepper recipes need a side salad or a vegetable on the side to make it a meal, not all stuffed peppers do need anything.

When you are making this recipe for ground turkey stuffed peppers with no rice, you do not need a side dish.  There are enough veggies and meat in this to make it a balanced meal.  But if you wanted to add a side, a salad or grain such as rice would be a perfect side!

Should you precook peppers for stuffed peppers?

There are many theories to this.  Some recipes ask you to do it in the method. While others say not to, it can be very confusing.

I find that when I do that, the pepper gets a little mushy. I prefer my peppers to be just slightly cooked. But if you like a softer texture, There are things that you can do to make it get a bit more cooked without precooking the peppers.

One way to get a little more cooking to the pepper is to add water (or more water) to the cooking dish. This increases the moisture in the oven and cooks the pepper faster.

Another way you can do that is to cook the peppers a little longer at the end. Since this dish is dairy-free and has no cheese, it is easy to add a little extra cooking time, so the pepper is a bit more cooked.

I prefer a more solid pepper, but it is really up to you how you like your peppers’ consistency.  Precooking the peppers is not needed with this recipe.

How to make stuffed peppers with ground turkey and vegetables

Make these really healthy vegetable and turkey stuffed peppers recipe. They are made with zucchini, peppers, and ground turkey in a pepper shell.

Ingredients

4 Bell peppers, any color
1lb of ground turkey
2 T Olive oil
1 onion Chopped
1 bell pepper of a different color, chopped
2 small zucchini, chopped
1 can of diced tomatoes, liquid reserved
1 can Tomato paste
3 tsp Italian seasoning
1 T Garlic powder
Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees
  2. Cut tops off peppers and place standing in a baking dish
  3. In a skillet over medium heat, heat oil and add onions, zucchini, bell pepper, and ground turkey until turkey is browned.
  4. Mix in tomatoes, tomato paste, Italian seasoning, garlic powder, salt and pepper
  5. Scoop mixture into peppers until it is just over the top of the pepper.
  6. Combine remaining tomato paste with juice from the canned tomatoes and add water until thin enough to pour in pan around peppers. Pour into pan.
  7. Place in oven and cook for 20 mins.
