Beef and Asparagus Meal for Two

 

This recipe has quickly become a family favorite.  It is very easy to make any time of year if you blanch and freeze the asparagus you get on sale this time of year.

Beef and Asparagus Stir Fry

1/2 Pound Steak (I use london broil or whatever is cheapest)

3/4 pound asparagus spears



1/2 tsp Crushed Red Pepper

1/2 white onoion chopped

1/2 cup teriyaki Sauce

Cooked long grain rice (I like brown rice)

1. trim off fat from steak and cut it into 1/8 inch thick slices and set aside
2. Snap off tough ends of asparagus. Cut asparagus diagonally into 1 inch pieces, set aside
3. Heat a large nonstick skillet over high heat.  spray pan with cooking spray and add beef.  stir fry until almost completely cooked. Remove meat from pan and wipe out skillet with a paper towel.
4. Reheat pan and spray with cooking spray. Add asparagus, pepper, and onions.  Stir fry until asparagus is crisp-tender.  Return beef to pan and add teriyaki sauce and stir fry for about 1-3 minutes.
5. Serve over cooked rice
