Southwest Chicken Sausage Potato Breakfast Burritos

  • 2 T Olive oil
  • 1/2 red bell pepper chopped
  • 1/2 C onion chopped
  • 4 Medium russet potatoes chopped
  • 2 tsp Cumin
  • 1 tsp Garlic salt
  • red cayenne pepper to taste
  • 8 eggs scrambled
  • 8-10 Tyson chicken nuggets diced
  • 1 Jimmy Dean fresh sausage roll
  • Southwest ranch sauce 2 tsp per tortilla
  • Flour tortilla depending on size you should be able to do 12-14 tortillas
  • grated cheese optional


  • Put oil in the pan. Add peppers and onions and saute for 2 mins.
  • Put potatoes in the pan and cook for 5 mins.
  • Add cumin, garlic salt, and cayenne pepper and stir until potatoes are covered. Continue cooking until potatoes look translucent.
  • Put potato mixture in a bowl and cook sausage until thoroughly cooked through in the same pan without cleaning out seasonings.
  • In a separate pan heat up diced chicken and set aside. Then in that pan, scramble eggs until thoroughly cooked.
  • Take 1 tortilla and layer a small portion Tyson chicken nuggets, eggs, sausage, potato mixture, cheese, and southwest ranch then wrap it like a burrito.
  • If you are freezing them, wrap them in plastic wrap after you have prepared them. Enjoy!
