Southwest Chicken Sausage Potato Breakfast Burritos
It is back to school time which means it is time to find ideas for quick, healthy breakfast on the go. Â These Southwest Chicken Sausage Breakfast Burritos are a perfect one to make because you can freeze them for later, so you don’t have to do anything but heat and go!
If you are like me, you will be starting to do prep for quick, healthy meals on the go so you can get through the back to school craziness! Â And if you are even more like me and value your sleep, so you sleep as long as possible, these are a lifesaver!
We usually make a few batches of these every month and have them ready in the freezer for later. Â Having four kids, mornings are filled with helping one child at a time while making sure the others are doing what they need to do and then rotating between kids for hair, teeth, shoes, etc.
My kids can go to the freezer and get the Southwest Chicken Sausage Potato Breakfast Burrito out, heat it up and have a quick, healthy breakfast on the go! The best part about them is that they are so good and not your typical plain burrito!

I quickly whipped up this meal for my family and I was so happy how it turned out and how easy the prepared sausage made it.
Southwest Chicken Sausage Potato Breakfast Burritos
2 T Olive oil
1/2 red bell pepper chopped
1/2 C onion, chopped
4 Medium russet potatoes, chopped
2 tsp Cumin
1 tsp Garlic salt
red cayenne pepper to taste
8 eggs, scrambled
8-10 Tyson chicken nuggets, diced
1 Jimmy Dean fresh sausage roll
Southwest ranch sauce 2 tsp per tortilla
Flour tortilla (depending on size you should be able to do 12-14 tortillas)
grated cheese (optional)
How to make this quick, healthy breakfast on the go
- Put oil in the pan.  Add peppers and onions and sauté for 2 mins.
- Put potatoes in the pan and cook for 5 mins.
- Add cumin, garlic salt, and cayenne pepper and stir until potatoes are covered.  Continue cooking until potatoes look translucent.
- Put potato mixture in a bowl and cook sausage until thoroughly cooked through in the same pan without cleaning out seasonings.
- In a separate pan heat up diced chicken and set aside. Â Then in that pan, scramble eggs until thoroughly cooked.
- Take 1 tortilla and layer a small portion Tyson chicken nuggets, eggs, sausage, potato mixture, cheese, and southwest ranch then wrap it like a burrito.
- If you are freezing them, wrap them in plastic wrap after you have prepared them. Enjoy!
