Southwest Chicken Sausage Potato Breakfast Burritos

2 T Olive oil
1/2 red bell pepper chopped
1/2 C onion, chopped
4 Medium russet potatoes, chopped
2 tsp Cumin
1 tsp Garlic salt
red cayenne pepper to taste
8 eggs, scrambled
8-10 Tyson chicken nuggets, diced
1 Jimmy Dean fresh sausage roll
Southwest ranch sauce 2 tsp per tortilla
Flour tortilla (depending on size you should be able to do 12-14 tortillas)
grated cheese (optional)

How to make this quick, healthy breakfast on the go

  1. Put oil in the pan.  Add peppers and onions and sauté for 2 mins.
  2. Put potatoes in the pan and cook for 5 mins.
  3. Add cumin, garlic salt, and cayenne pepper and stir until potatoes are covered.  Continue cooking until potatoes look translucent.
  4. Put potato mixture in a bowl and cook sausage until thoroughly cooked through in the same pan without cleaning out seasonings.
  5. In a separate pan heat up diced chicken and set aside.  Then in that pan, scramble eggs until thoroughly cooked.
  6. Take 1 tortilla and layer a small portion Tyson chicken nuggets, eggs, sausage, potato mixture, cheese, and southwest ranch then wrap it like a burrito.
  7. If you are freezing them, wrap them in plastic wrap after you have prepared them. Enjoy!
