This week I wanted to share a recipe I first found in Deceptively delicious, but I adapted it a bit so it was more like sweet potatoes. That way we are getting more veggies while still having something the kids love to eat!
Sweet Potato Pancakes
1 cup water
3/4 cup sweet potato puree
1/4 teaspoon cinnamon
1 cup pancake mix ( you may use your homemade pancake recipe for this without the liquid)
Mix water, sweet potato, and cinnamon in a bowl. Add pancake mix and stir just until combined, batter will be lumpy.
Coat griddle or large nonstick skillet with cooking spray and heat on medium heat.
Cook until bubbles form on the top and batter is set (about 2-3 min.). Flip the pancake and cook until golden brown on other side. (2-3 min)
