It is October and that means it is time to get out your pumpkin and make some yummy recipes with it!  I can’t go through the month with at least making one thing that has pumpkin in it.  These frugal pumpkin squares recipe is one that will become a classic pumpkin recipe in your home.  It will be one that you make each year because it is so good but also very easy to make!

This is a great sweet and healthy treat.  One that could be used for Halloween or Thanksgiving get-togethers.

Frugal Pumpkin Squares Recipe

Ingredients
2 cups all-purpose flour
2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon ground cloves
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks unsalted softened butter
1-1/4 cups sugar
1 large egg
2 teaspoons vanilla extract
1 cup pumpkin puree
1/2 cup milk chocolate chips
1/2 cup dark chocolate chips

Instructions

1. Preheat the oven 350-degrees; Grease a 9×13 baking pan and set it aside.
2. In a medium bowl, cream together the sugar and butter.
3. Beat in the egg and vanilla until combined, then add in the pumpkin
4. Mix in the dry ingredients until the mixture is creamy but thick. Fold in the chocolate chips – the milk and dark play very nicely with the pumpkin!
5. Spread the batter evenly in the prepared pan. Bake for about 35-40 minutes until the sides start to pull away from the sides.
6. Cool completely in the pan.
7. Refrigerate overnight in the pan.
8. Cut the bars in the pan and serve. Store leftovers in an airtight container.
