Italian Broccoli and Pasta Salad Recipe

This Italian Broccoli and Pasta Salad Recipe is to die for!  It is simple too which makes it even better!  I love to make it for parties and picnics.  It is filling so it could be used as a main dish or a side. It is the best cold pasta salad recipe I have ever made.

Italian Broccoli and Pasta Salad Recipe

Ingredients –

16 oz tricolor rotini pasta
One head of broccoli, cut into smaller pieces
One large tomato diced
1/2 jar of olives, sliced
Two medium-sized cucumbers, peeled and diced
(2) 16 oz bottles of Kraft Zesty Italian dressing
salt & pepper to taste

Directions –

#1. Cook the pasta according to package directions (about 9-11 minutes), drain and rinse the pasta under cold water. Let the pasta sit and cool while you are preparing the veggies.

To prepare your vegetables just cut them up into small pieces your desired size.  Some people like them smaller and others larger so much chop them to your taste and style and they will still be fine.  I suggest the broccoli be cut up into bite size pieces and left as whole as possible just for looks.

#2. Once the pasta has completely cooled to room temperature, place in a large bowl. Add in the veggies and carefully mix.

#3. Add in one 16 oz bottle of the Zesty Italian dressing and continue to stir gently until all the pasta and veggies are coated.
#4. Add salt and pepper to taste.
#5. Cover and place in the fridge for a few hours to chill. Add extra dressing if needed.
