Cranberry Orange Bread Recipe

This week I made the most wonderful cranberry orange bread.  Since I have never made orange cranberry bread I didn’t know how it tasted, but I honestly was expecting for it to be a lot sweeter than it was.  I was actually happy it wasn’t sweeter because it is the perfect combination of bitter and sweet and it is a great change to the usual sweet fruit breads I have made.

I was diggining in my never ending freezer and realized I had some cranberries tucked in the back from thanksgiving and decided to make some cranberry orange bread with them!  We LOVE breakfast breads like banana bread, zuchinnin bread and muffins as well.  So this was an easy thing to do.

I also love to freeze these for later.  This bread froze REALLY well.  So it is great to make ahead of time and keep in the freezer for a quick breakfast!

Here is what I did:

Cranberry Orange Bread

  • 2 cups flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped cranberries or 3/4 cup of dried cranberries
  • 3/4 cup orange juice
  • 1/4 cup canola oil
  • 1 egg, beaten
  • 3/4 Tbsp grated orange peel

Instructions:

  1. Pre-heat oven to 350°F.
  2. Mix together orange juice, sugar, butter, egg, and orange peel.
  3. Mix the flour, baking powder, baking soda, and salt in a large mixing bowl. Add the chopped cranberries to coat with the flour mixture. (if you are not using fresh berries, you don’t add the cranberries here)
  4. Add to flour mixture and stir. Add cranberries if using dried cranberries and stir with a wooden spoon until just blended.
  5. Pour into a greased 9×5 or 8×4 loaf pan. Bake at 350°F for 55 to 60 minutes or until done (a toothpick inserted into the center comes out clean).
  6. Cool in pan for 10 minutes. Remove from pan and cool on a wire rack.
